Art + Science 'Symbiosis' Coferment : Grüner Veltliner & Willamette Apples NV
Symbiosis is made from foraged apples (Willamette Valley) and Grüner Veltliner grown at Johan Vineyards. Fermented together (on the Grüner skins for three weeks), and aged in used oak for ten months, then a light dosage for a second in-bottle ferment. This is such a fantastic expression of Oregon fruit - a vinous yet decidedly-orchard experience, with a textural presence and lingering acid. In a word : special.
