Scar of the Sea, Pinot Noir Sparkling Rosé 2020
This wine is a Rose of Pinot Noir made in the Methode Ancestrale tradition from the Topotero Vineyard, located in Avila Beach in San Luis Obispo County. The vineyard is farmed practicing organic on a home ranch just over a mile from the Pacific Ocean. The wine was whole-cluster pressed and then fermented in neutral French oak barrels with native yeast. The wine was bottled at the very end of fermentation to capture the natural bubbles in the bottle. The wine aged on lees in bottle before being riddled, disgorged, corked and caged, all by hand.
Chateau Deluxe 'Methode Rurale' Brut Rosé
This is Chardonnay and Pinot Blanc from the Willamette Valley in 2018, fermented dry in neutral barrels and blended with fresh Pinot Noir rosé from 2019. Secondary fermentation occurs in bottle. This barely-blushing bottle boasts a buoyant, bracing bubble - with a whisper of wildflowers drifting through summer strawberry fields.
