Use It Up Sheet-pan Fried Rice

Ingredients

2 ½ cups of uncooked rice, cooked according to package instructions at least a day in advance

4 cups of finely chopped vegetables - root and hardy vegetables work great here!  (i.e. carrots, radish, celery, bell peppers, etc.)

½ a cabbage, shredded ~ about 6-8 cups

1 Tbs freshly grated ginger

3 cloves of garlic, finely minced or crushed

1 bunch green onions, sliced

4 eggs, whisked

½ pound bacon, cut into ½ inch pieces, optional

½ pound shrimp, optional

Dressing

½ cup soy sauce

⅓ cup rice vinegar

2 Tb fish sauce

2 Tb mirin

2 Tb sesame oil

Garnish 

Toasted sesame seeds

Method 

Preheat oven to 450 F

Lightly grease a large sheet pan with oil. Pile on rice, vegetables, cabbage, ginger, garlic and half of the green onions. Mix all ingredients for dressing and then toss with rice on sheet pan. Bake 20-25 min

Add bacon and cook for another 10-15 min

Turn oven down to 350 F. Drizzle eggs and nestle in shrimp, if using, and place back in oven. You don’t need to wait for the oven to cool, just throw them back in! Depending on your oven, you could even turn it off and the residual heat in the oven will cook the shrimp and eggs gently. Cook for another 5 minutes or until eggs and shrimp are just done. 

Top with toasted sesame seeds and the remaining green onions. Enjoy!
