Shaved radicchio salad with walnuts, parmesan, parsley & balsamic

serves 2-4


1 medium head radicchio

1/2 cup walnuts, toasted & roughly chopped

1/4 cup coarsely grated parmesan

1/3 cup parsley leaves, stems removed and leaves left whole

1 Tablespoon balsamic vinegar

2 tablespoons olive oil

flaky sea salt & fresh ground black pepper


Slice the radicchio 1/4" thick. Toss with remaining ingredients and season with salt & pepper.
