We love strawberries just as they are when they are early and fresh. Tuck this recipe away for when you have so many strawberries you don't know what to do with yourself. Or when they start waning and are past their prime.... This will instantly liven them up and anything you add them to. Spoon over yogurt, into scone batter, on top of pancakes or waffles, or just eat them as is. Share with us your favorite use!
1 pint of strawberries
2-4 Tbsp of maple syrup
1 Tbsp olive oil
salt and pepper
Toss everything together with a pinch of salt and a few cranks of black pepper.
Spread on a parchment lined baking sheet and roast for about 30-45 minutes, checking and tossing every 15-20 minutes or so. The strawberries will reduce and get jammy, deep, and delightful. Be careful not to take it so far as to burn.
Eat on everything you possibly can!
