4 cups of mixed chicory greens, thinly sliced
2 ripe medium pears (or 4-5 seckel pears), halved, cored, and sliced thin
1/2 cup fresh Italian parsley
- 1/2 cup fresh celery leaves (or fresh parsley)
- 1 cup of finely sliced celery
2 oz / ½ cup blue cheese, crumbled
¼ cup pistachios, almonds, or walnut roughly chopped
5 tablespoons extra-virgin olive oil
3 tablespoons honey
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon Salt and pepper to taste
Whisk olive oil, honey, vinegar, mustard, 1 teaspoon salt, and a few cracks of pepper together in jar with a lid and shake for 30 seconds until combined.
In a large serving bowl, add the sliced chicory greens, pear, celery, celery leaves and parsley.
Toss the salad with dressing and sprinkle the blue cheese & chopped nuts over top.
Transfer to platter and serve!
