Mustard Greens with Carrot Ginger Miso Dressing

While this salad may not be the prettiest salad to lay eyes on, it is incredibly delicious. This is a nod to the side salad I used to get at my favorite sushi joint growing up in California. It was iceberg lettuce with a vibrant orangey carrot dressing. Simple and delicious. It gets updated here with the use of mustard greens, or really any in-season hearty green you can find. It'll all work. Lastly, there's something I love about a salad dressing made of vegetables, carrots here in this case. The carrots add necessary body and character to the dressing, making it a multi-purpose sauce that doubles as a delicious condiment on grain bowls.
Ingredients
1 bunch of mustard greens
Dressing
1 cup chopped carrots
2 garlic cloves, roughly chopped
1/4 cup olive oil
2 T tahini
1 T miso
1/4 cup ACV
1 inch of ginger chopped
Black pepper
Garnish
Sesame seeds, toasted
green onions, sliced
Method
Add all ingredients for dressing to a blender or food processor. Blend until mostly smooth, it will remain a bit thick and slightly chunky. Toss dressing with greens and garnish with
