You can find a variation of this tomato-cucumber salad all throughout North Africa and the eastern Mediterranean. It's refreshing, clean, and goes with just about anything as a side dish. The addition of Zaatar adds some unexpected nutty and herbal flavors.
1 green onion
2 tbsp extra virgin olive oil
1 tbsp lemon juice
Pinch of salt
1 tbsp zaatar
Slice of feta optional
Chop the tomato and cucumber in a uniform size, and thinly slice a green onion. Give those ingredients a few turns in a bowl to mix and set aside.
To make the dressing, add olive oil, lemon juice, salt, and zaatar to a bowl or jar with lid. Whisk or shake together and then dress the salad.
If you'd like, a little bit of feta is a nice touch!
Some fresh coriander seeds and flowers add a nice visual and flavor addition!
