Gomae (Sesame Spinach Salad)

Serves 2-3


8 ounces spinach, washed 
2 tablespoons toasted sesame seed
1 tablespoon soy sauce 
2 teaspoons sugar 
½ teaspoon sake (optional)


Prepare an ice bath by filling a bowl with water and a decent amount of ice. Bring a pot of water to a boil, and add your spinach. Blanch for 30 seconds, then remove from the water and add to the ice bath immediately. Let sit for a few minutes before draining in a colander. Squeeze the spinach in batches to release any excess water, then roughly chop it. Set aside in a medium bowl. 

If you have a mortar and pestle, use it to roughly smash the toasted sesame seeds - you don’t want to make a paste, just to break them down so they have more texture and flavor. Whisk together the sesame seeds, sugar, soy sauce, and sake (if using), and mix into the spinach (we recommend using your hands to break up the spinach bunches while doing this). Enjoy immediately or refrigerate until ready to serve.
