Baked Pear Oatmeal
2 cups old-fashioned rolled oats (200 g)
1 tsp baking powder
½ teaspoon salt
⅓ cup maple syrup
1 cup dairy or non-dairy
1 cup water
4 tbsp butter or coconut oil, melted
1 tablespoon vanilla extract or almond extract
2 pears, 1 ½ diced and the other ½ thinly sliced and reserved for topping
1 tablespoon turbinado, brown, or coconut sugar
½ cup walnuts
⅓ cup pepitas
Preheat your oven to 375º F and butter an 8 x 8 inch pan, or equivalent.
Mix together rolled oats, baking powder, salt, half of the walnuts and pepitas, and diced pears in a bowl. Toss well and add to the prepared pan.
In a separate bowl, mix maple syrup, milk of choice, water, egg, butter and extract of choice. Pour over the oats and use a spoon to combine well. Top with remaining sliced pears. Sprinkle with remaining walnuts, pepitas, and turbinado sugar.
Bake for 55-60 minutes until lightly browned and cooked through. Let cool slightly and serve with a bit of oatmilk, cream, or yogurt.
