This non-alcoholic sparkling drink is nicely balanced between the subtle acidity of the verjus and the sweetness of honey or jam. Verjus can vary in tartness, so if you’d like a bit more acidity we like to add a squeeze of lemon juice or apple cider vinegar. The honey simple syrup or jam syrup can be used for other mocktails, but is also great to use for adding sweetness to salad dressings and cups of tea or coffee!
4 oz. apple verjus
2 teaspoons honey simple syrup or jam (see note below)
Thinly sliced apple and/or a slice of shaved lemon peel, for garnish
Fill two glasses with ice and the apple slices, if using. In a separate mixing glass, combine apple verjus and honey or jam simple syrup, and stir to combine. Pour over glasses of ice, top with soda, and garnish with the lemon twists, if using. Serve immediately.
Note: If using honey, a simple syrup can be made by combining a 1:1 ratio of honey and water in a small saucepan over medium heat, stirring until honey is completely dissolved, then allowing to cool. Store in an airtight container for up to 1 month in the fridge.
If using jam, a “syrup” can be made by combining a 1:1 of the jam of your choice and water in a small saucepan over medium heat, stirring until smooth, then passing through a fine mesh strainer to remove any bits of fruit. Allow to cool before using.
